Build the Base

  1. Melt the butter in a saucepan. Add the onion and cook for 8-10 min until soft and sweet.
  2. Score a cross at the base of each tomato, blanch for 30 seconds, plunge into cold water, then peel and chop.
  3. Stir in the garlic, ginger and chilli. Cook for 2 minutes, then add the coriander, cumin, garam masala and turmeric and cook for 1 minute more.
  4. Add the tomatoes, tomato paste and coconut milk. Simmer for 10 minutes until slightly thickened.

Cook & Serve

  1. Add the prawns and simmer for 3-5 minutes until pink and just cooked. Season and stir in the mint.
  2. Serve immediately with steamed basmati rice or naan bread.
Don't overcook the prawns
Add them at the very end - they only need 3-5 minutes until just pink and opague. Let the coconute-tomato base simmer first so the flavour has time to build.

Yes - thaw completely and pat very dry, otherwise the sauce will thin out.
