Pan-Fried Pear Salad with Gorgonzola & Crispy Pancetta
Sweet, Salty, and Tossed in a Warm Honey-Balsamic Dressing
Ingredients
- 240g wild rocket leaves
- 40g pine nuts, toasted
- 400g pancetta, diced
- 30g unsalted butter + 1 tsp olive oil
- 4 pears, quartered
- 1 tsp honey + 1 tsp + 2 tbsp balsamic, ½ tsp Dijon, 150g Gorgonzola
Instructions
Toasting & Crisping
- Distribute the rocket evenly among four serving plates.
- Heat a frying pan and toast the pine nuts for three minutes, or until golden-brown.
- Heat the pancetta in a frying pan over a medium heat and cook until crispy.
Pan-Frying the Pears
- Place a knob of butter and the oil into a clean frying pan set over a low heat. Once the butter melts, add the pears and honey. Cook 5 mins.
- Add the balsamic vinegar and cook for another minute, then take off heat. Reserve juice.
Assembling & Serving
- Arrange the pears and pancetta on top of the rocket leaves.
- For the dressing, put the pan containing the pear juices back on the heat and add the remaining knob of butter, a dash of honey, the 2 tbsp balsamic vinegar, the mustard and the pine nuts. Warm through.
- Pour the dressing over the pears and the rocket. Scatter over the gorgonzola and serve.
