Mise en place ingredients

The Secret is the "Double Tomato" Illusion

Most quick-fix pasta dishes suffer from what I call "Boring Sauce Syndrome." They either taste like plain canned purée or just a bunch of dry tomatoes hanging out with noodles.

The genius of this recipe lies in the hybrid strategy. We use tinned chopped tomatoes to create a deep, rich, saucy foundation that clings to the tagliatelle like its life depends on it. Then, right at the very end, we drop in a small army of fresh cherry tomatoes. They get warm, they soften slightly, and they stay incredibly juicy. Every bite gives you that satisfying, sweet burst of fresh summer flavor against the savory background sauce.

How to Not Overcook Your Shrimp (A Tiny Manifesto)

Shrimp are the absolute speed-demons of the protein world. Cook them for two minutes, they are perfect. Cook them for four minutes, and you are suddenly chewing on tiny, pink rubber erasers.

Shrimp searing in pan

The trick here is the high-heat sear right at the start. We toss them into a roaring hot skillet with olive oil, let them get beautifully opaque (about three minutes tops), and then ruthlessly banish them to a side bowl. They sit on the bench while the sauce simmers, and they only rejoin the party at the very last second to get coated in the warm sauce.

Garlic Tomato & Shrimp Tagliatelle

An elegant, restaurant-quality Italian dinner ready in under 30 minutes.

Prep Time 10–15 mins
Cook Time 15 mins
Serves 4 people

Ingredients

  •  700g medium sized shrimp or prawns, peeled and deveined (tails removed)
  •  6 tsp olive oil
  •  2 garlic cloves, minced
  •  400g tinned chopped tomatoes with juice
  •  20–25 cherry tomatoes, halved
  •  450g dried tagliatelle (or pasta of your choice)
  •  2 tbsp fresh basil leaves, torn into small pieces

Instructions

  1. Prep and Sear Shrimp: Season the shrimp with salt and pepper. In a large skillet, heat 4 teaspoons of the olive oil over high heat. Add the shrimp and cook until opaque throughout, turning occasionally for about 3 minutes. Transfer to a bowl and set aside.
  2. Start Sauce Base: To the same skillet, add the remaining 2 teaspoons of oil and add the minced garlic. Cook over medium heat until fragrant, about 30 seconds. Pour in the canned chopped tomatoes alongside their juices, add the water, and bring the mix to a boil.
  3. Simmer: Reduce heat to a simmer, stirring occasionally until the tomatoes soften and reduce slightly, about 15 minutes. Remove the sauce skillet from the heat and stir in the halved fresh cherry tomatoes.
  4. Boil Pasta & Combine: Meanwhile, bring a large pot of salted water to a boil. Cook the tagliatelle until al dente according to package instructions. Drain well and return the pasta to the pot. Add the rich tomato sauce, cooked shrimp, and torn fresh basil leaves.
  5. Serve: Toss everything together gently and serve immediately. Garnish with additional fresh basil leaves if desired!
Now, dim the kitchen lights, grab a fork, and pretend you're sitting on a balcony overlooking the Amalfi Coast. You earned it.
